Easy Calzone Recipe

From the Trader Joe's Fan site:

INGREDIENTS
sausage, cooked chicken, etc, whatever meat you like
1 C TJ's red pepper spread or pinjur spread
1 C low-fat ricotta
4 oz. low-fat shredded mozzarella
1/4 C. basil, chopped
salt and pepper to taste
1 lb. TJ's pizza dough (I like the garlic herb one best)

Preheat the oven to 425.

Combine the roasted red pepper spread, ricotta, mozzarella, basil, salt and pepper in a bowl and mix.

Break the pizza dough into four equal pieces and roll each piece into a ball. On a floured surface, stretch and roll each ball into a thin circle. Spread 1/4 of the chicken and a 1/4 of the cheese mixture on half of each circle. Stretch the other half of the dough over the filling, and pinch to seal each calzone.

Place the calzones on a lightly oiled baking sheet and cook for 18-20 min., or until golden brown.

Makes 4
